Abstract: Nowadays, while continuous improvement of comprehensive national strength is happening, the soft cultural power has gradually become another focus that may directly affect the overall status of the Chinese nation in the world. Among which, the influence of the food culture, a glowing branch of Chinese splendid culture, deserve enough attention. To better understand and blend into China, more foreigners hope to experience a real Chinese style

through common methods like taking authentic Chinese cuisine and visiting famous scenic spots. This tendency does not only demonstrate a promising advancement of China's tertiary industry, but also show an infinite potential of Chinese culture to outshine the whole world. The menu of Chinese cuisine, the microcosm of the entire Chinese food culture, can bring delicate food to meet western taste buds. And what’s more, those dishes could show the diligence and wisdom of ancient Chinese working people, as well as a Chinese spirit of fortitude. In order to fully exhibit Chinese culture and to eventually achieve a final Chinese culture output, how to perfect existing Chinese-English menus has become one of the hottest topics among linguists.

The thesis is using examples to present specific rules of post-annotation[1], explaining how to apply this strategy in terms of the translators’ standpoint, content focus, precautions and practical requirements. All the efforts is aim to minimize cultural loss and maximize the retention of Chinese characteristics.

在国力日趋强盛的今天,文化软实力作为中国经济实力崛起之后的又一发展重心,能够影响中华民族在世界范围内的整体地位。其中,饮食文化,作为中华灿烂文化中一个重要的分支,其影响力不容小觑。为了更好地了解并融入中国,越来越多的外国人选择通过中国地道美食,美景等媒介,体验地道的中国风情。这一倾向不仅预示着我国第三产业的蓬勃发展,也从另一方面展示出了中华文化在世界舞台上大放光彩的无限潜力。

中餐菜单作为整个中华饮食文化的缩影,不仅能够给外国人带来中国美食,满足味蕾;更能向全世界展示中国古代劳动人民的辛劳与智慧,以及坚毅的中国精神。为了更好地展现中华文化,实现真正的中华文化软输出,怎样更好地完善现有的中英对照菜单已经成为众多语言学者的热议话题之一。

本文通过实例演示后设表述运用细则,从诸多方面包括译者的立场,内容侧重,注意事项,运用要求等,阐释如何运用中这一补偿策略,将菜单翻译中的文化亏损减少到最小,最大限度地保留中国特色。
